Grilled Stuffed Quesadillas

I love Quesadillas - crunchy tortillas, melty cheese, yummy veggies, sour cream and salsa... marinated, grilled steak...

So I thought, why not grill the quesadillas too!?!?






Ingredients:
  • 8 oz sirloin steak
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon granulated garlic
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • juice and zest of 1 lime
  • 1 tablespoon olive oil
  • 1 onion, sliced
  • 1 red pepper sliced
  • 6-8 mushrooms, sliced
  • 10 burrito sized flour tortillas
  • 1 lb cheese - Colby jack or your choice
  • shredded lettuce
  • salsa
  • sour cream
Rinse the steak and pat dry with paper towels. Use 1/2 the olive oil, salt, pepper, garlic, cumin, chili powder, lime juice and zest - mix in a small bowl - rub into the steak.


Set the steak aside while you prep the rest of the ingredients and heat the grill.

Slice the onion, pepper and mushroom into about 1/4 inch slices.


Once the grill is hot - throw the steak on - it will only take about 3 minutes per side. Meanwhile, heat a large skillet to med-high heat - add in the rest of the olive oil and the mushrooms.


Cook the mushrooms for 2-3 minutes.


Then add in the onion and peppers. Cook for another 4-5 minutes until softened.


Remove the veggies and meat from the heat. Let them both rest for a few minutes while you shred the cheese.

 








Slice the steak and assemble the quesadillas.

Start with a tortilla. Sprinkle a little cheese on top.
Add a layer of veggies, meat, or both.
Top with a little more cheese and another tortilla.
Repeat!

 




I made a big stack of them, then headed out to the grill!


Slap them on the hot grill - about 300` - but watch them closely!


It will only take about 3 minutes on each side. Use a large spatula to flip them, or a pizza paddle - be careful not to let the delicious stuffing spill out!


Cook just long enough to melt the cheese, crisp up the tortilla and, of course, get some amazing grill marks!


Remove them from the grill and slice them.


Serve with shredded lettuce, salsa and sour cream.


This is a SUPER easy week night meal or weekend lunch with very little clean up. You could change up the meat, using chicken, pork, shrimp, or leftovers. And it would be just as easy to double or triple this recipe to share with friends or family.
