Clam Linguini

I had a bottle of good white wine, and a white wine pasta sounded good.....

So I looked thru my pantry to see what else I could throw in there.... and found a can of Clams.

Clam Linguine it is!

 Here is what you'll need:
  • 12 oz linguine noodles
  • ½ cup chopped parsley
  • ¼ cup chopped red onion
  • 6-10 cloves chopped garlic
  • 1 tomato diced
  • 1 large can of clams
  • ¼ cup white wine
  • ¼ cup clam broth
  • ¼ cup cream (or milk)
  • 2 teaspoons olive oil
  • 1 lemon (1/2 for juice, ½ for garnish)
  • Parmigano cheese for garnish
  • Salt & Pepper to taste
  • 1 tablespoon corn starch
Cook pasta according to package directions. When draining, reserve about 1-2 cups of pasta water.

Saute tomato, onion, garlic and half of the parsley in olive oil for 1-2 minutes.

Add the white wine and cook for 3-4 minutes.

Add the cornstarch in to the milk/cream and stir to combine.
Add cream (milk), lemon juice, clams and clam juice to the pan and stir well. Cook for 4-5 minutes.

Add pasta, toss with the rest of the sauce, cook for an additional 3-5 minutes, adding more of the reserved past a liquid as needed.

Right before serving, mix in the rest of the parsley.

Serve with crusty Italian Bread and a baby greens salad, top the pasta with shredded Pecorino Romano and the reserved lemon wedges.
