Deviled Eggs

Think back to your childhood... back... back...a little further... STOP!

Remember those Fourth of July potluck celebrations?
The ones you would drive to at the butt crack of dawn, and spend all day eating, and playing, and having water fights, and eating, and watching fireworks, and eating?

Do you remember one time where there weren't deviled eggs?

They are about as American as hot dogs and potato salad!

So make some up, and eat them, and share them with your friends - they are good!

What you will need:
(I made 16 - 8 eggs, you can adjust for how many you are making)

  • 8 eggs
  • 1 medium pickle - dill or sweet, your choice
  • mayo - about 2-3 tablespoons
  • mustard - 1 tsp+
  • granulated garlic
  • fresh/dried parsley
  • salt and pepper to taste
  • paprika (optional)

Hard boil your eggs - place them in a pot of cool water, put on the stove on high, bring to a boil. Boil for 12 minutes, turn off and cover for an additional 10 minutes. 

Rinse in cool water and gently peel.

Slice the eggs in half lengthwise.

Carefully remove the yolks, placing them in a bowl and set the whites aside.

Mash the yolks well with a fork. Also chop your pickles - very very VERY tiny! I like dill, and my pickles hds whole pieces of garlic in them, so I chopped a few of them too - you can never have enough garlic! (Thanks Mo for the AMAZING pickles - I'm gonna have to make those with you some day!)

Add in about 1 1/2 tablespoons mayo, mustard (I used spicy brown, and a whole tablespoon) about a teaspoon parsley, about 1/4 teaspoon each salt, pepper and garlic.

Mix well, adding more mayo as needed to make it creamy. ( I ended up using a little over 2 tablespoons) 

Mix in your pickles and taste for seasoning - add more mustard, salt, pepper - whatever makes it good!-------------------------

Carefully fill each egg white with the filling using a teaspoon. 

Arrange on a plate. You can top with a little paprika - I used smoked paprika because I'm obsessed with it right now...!

Your Mama - or Great Gramma - would be so proud!
