Sliders - Ranch Beef & Roasted Red Pepper Salmon

Have you ever thought that if you eat a whole hamburger, you'll be too stuffed to eat anything else?

Make sliders - they're small enough to still enjoy a side dish - or eat 3!


What you will need:

  • 1 lb salmon
  • 1 lb ground beef
  • 1 packet ranch dressing mix
  • 1 slice bread
  • roasted red peppers
  • milk
  • 1 egg
  • bread crumbs (or crushed crackers)
  • Salmon Seasoning (not pictured)
  • chopped fresh herbs (also not pictured)
Ranch Beef Burgers:

Tear up the bread into small pieces and mix with about 2 tablespoons milk.
Add in ground beef and ranch dressing seasoning.
Mix well with your hands and form patties about 2 1/2 inches round, they will shrink upon cooking.


Roasted Red Pepper Salmon Patties:

Remove salmon from skin. Cut into small pieces - most should be about 1/2 to 1/4 inch, but chop some of it up pretty small. 
Chop red peppers and herbs.
Mix together the salmon, about 1/4 cup red peppers, 1/4 cup fresh herbs, 1 egg, 1/4-1/2 cup bread crumbs and 1 1/2 tablespoons Salmon Seasoning using your hands. 
Form into 2 inch patties.


Grill, and top with your favorite burger toppings.


On the Salmon burgers, I like mayo, Dijon, arugula, tomato and avocado.


I made homemade artisan rolls with the 5 Minutes A Day To Fresh Bread recipe (http://www.motherearthnews.com/Real-Food/Artisan-Bread-In-Five-Minutes-A-Day.aspx)
But small rolls or King's Hawaiian Bread will work just as well.


This recipe makes a TON of sliders, you could feed a crowd, or put some in your freezer for an easy dinner later. 
And obviously you could make regular sized burgers with this recipe as well.
