Fajitas, Using Veggies & Leftover Steak

Last night, Nate wanted steak.

He bought 2 HUGE New York's - HUGE! Like, 1 1/2 lbs. each.
They were beautiful, and that's coming from someone who doesn't eat meat!

He seasoned them with just a little olive oil, salt and pepper, and grilled them, HOT, on the charcoal BBQ.

He said they ware amazing - I'll take his word for it.

He thought he was going to finish off these steaks between himself, the boys and his mom.

Boy, was he wrong!

They ate less 1 full steak between the 4 of them!!!

You know what that means??


Serves 4.

What you will need:
  • About a lb of steak - raw or leftover
  • 1 green pepper
  • 1/2 large white onion
  • 6-8 mushrooms
  • 6-8 med. flour tortillas
  • garnish:
    • cheese
    • sour cream (or Greek yogurt, my new fav. for Mexican food!)
    • salsa
    • lime juice
    • jalapenos
Slice up the mushrooms, green pepper and onion.

Slice the steak into approximately 1 inch wide by 1/4 inch thick pieces.

Heat a large pan to medium high heat for the veggies - I like to use a stainless steel pan.

Add in the veggies and cook for about 4 minutes, stirring only once or twice to get nice char marks. DO NOT ADD ANY SATL OR PEPPER. It wall cause them to sweat, not brown.

Meanwhile, heat a cast iron pan to medium high heat. If you don't have cast iron, any pan will do.

Add in a small spray of oil, and cook the steak for just a few minutes if using leftover steak - if starting from scratch, it will take about 5 minutes.

While the steak is cooking, turn the heat off in the veggies. You can add a little salt and pepper to them and stir. Then, layer your tortillas around the pan on top of the veggies. Cover and allow them to steam.

Assemble your fajitas - meat and or veggies, and your choice of garnishes - I like a tiny sprinkle of cheese, some Greek yogurt, some salsa and a squeeze of fresh lime juice.

Serve with some back beans and Lime Cabbage-Broccli Salad - tomorrows recipe!!

This kid is so dang fast, I can never get a clear picture! But, it was so yummy!

For the boys, I rolled them into little burritos, less messy!
