Lime Cabbage-Broccoli Salad

A simple side dish, tart and healthy!!!

What you will need:

  • 2 cups packaged broccoli slaw
  • 1 cup cabbage
  • 1/2 red onion
  • dressing
    • 2 limes, juiced
    • 2 tablespoons apple cider vinegar
    • 11/2 tsp coriander
    • 1/2 tsp granulated garlic
    • 11/4 tsp dried oregano
    • 1/4 tsp celery seed
    • 1/2 tbsp sugar
    • 1 tbsp chopped cilantro
    • 1 tbsp olive oil
Julienne cabbage and red onion, add into a bowl with broccoli slaw.

Add all dressing ingredients into a jar and shake well. This dressing is best when it gets to sit for a minimum of an hour.

About 10 minutes before you eat, mix dressing with veggies.

Serve with any Mexican main course - I made this to accompany my simple Fajitas made with leftover Steak. This would also work well for a potluck, as nothing needs to be refrigerated.
